Portuguese Bean Soup with Kala Kokua, LLC Smoked Turkey Drumsticks

 

2-4 Kala Kokua Fully Cooked Smoked Turkey Drumsticks

1 pkg. Bacon (sliced)

1 - Round Onion (diced)

3 - Stalks of Celery (diced)

2 - Portuguese Sausage (sliced)

2 - Potatoes (cubed)

3 – Ripe Tomatoes (diced)

1 can Campbell’s Tomato Soup

1 - Sweet Potato – Optional (cubed)

1 can Kidney Beans – Optional (drained)

4 - Bay leaves

2 cups Elbow Macaroni (uncooked)

Salt & Black Pepper – to taste

 

In large pot, boil Fully Cooked Smoked Turkey Drumsticks in 10 cups of water. In a separate frying pan, brown bacon, onions and celery until tender. Add contents of frying pan (bacon, onion and celery) into large pot of water with Drumsticks and bring to a boil and lower heat to medium to simmer.

                     

Add the remaining ingredients and allow to simmer for 1 Hour. Add salt and black pepper to taste. Remove turkey drumstick bones before serving.
